Free Recipe – Drunken Spareribs – La Gourmet Ecopan Oriental Cuisine Magazine June Issue

1kg spareribs (cut into 7.5cm lengths), grated zest of 1 lemon

1 tbsp ginger juice, 2 tbsps corn flour, 1/2 tsp bicarbonate of soda, 2 tsps salt, 1 tsp sugar, 1 tsp ground white pepper

125ml water, 125ml beer, 60g honey, 1/2 tsp dark soya sauce, 1/2 tsp salt to taste.

1.Marinate spareribs with the marinade ingredients for minimum 2 hours in the refrigerator.(pic1)
2.Heat oil in the La gourmet Ecopan, place marinated spareibs in hot oil & cover with its lid. Push the knob on the lid to open position to allow the steam to flow out. After 8-10 minutes, open lid & turn over the spareribs. Cover the lid again for another 8 minutes.(pic2-3)
3.Remove spareribs from the La gourmet Ecopan & place into the La gourmet Truly Oriental Toughened Claypot.
4.Add Seasoning, cover with its lid & simmer over medium heat for 30 minutes or until ribs are tender, adjust seasonings to taste & turn off heat. There should be very little gravy now &the ribs are nicely golden. Grate in lemon zest & serve immediately.(pic 5-6)

You Got the Kitchen Cookware You Need?

021333bl.JPGIf you’re an experienced cook, who’s been cooking for many years, then you’ll probably have the kitchen cookware that you need already. If you’re new to cooking, or don’t know what you really need, then
here’s what should be in your kitchen.

1. You’ll need to make sure that you’ve gotthe right sort and size of saucepans to meet yourneeds. If you’ve got a large family, then you

might need more, or bigger pans. If you’re trying more and more adventurous dishes, then you might want to use the same sort of pans as the professional chefs use, which will give you more control and even heat distribution.

2. Stockpots are ideal for making soup in, or for cooking large amounts of potatoes, pasta or rice. If you know that you’ll be entertaining, and want to make sure that you cook enough food, then you might want a stockpot.

3. It’s important to make sure that you have enough cutlery for your family, and for when you have visitors round too. Whilst you might be happy using knives and forks that don’t match, or have seen better days, you won’t want to give the wrong impression to your guests, no matter how nice your food is.

4. A steamer will allow you to cook different vegetables at the same time, in the same pot, and will ensure that they keep their vitamins and other nutrients too. With a see through lid, you’ll be able to see when your vegetables are cooked too. Nicer looking and tasting vegetables are much more appealing to your children too, so it’ll be easier to make sure that they get their 5 a day.

5. A pressure cooker can dramatically reduce the time it takes to cook meals. No matter whether you’re cooking a curry or a chicken, if you want to spend less time in the kitchen you’ll want a pressure cooker.

6. A good quality kettle will be worth every penny if it is used a lot. Instead of sticking to a traditional white design, why not choose a more modern or colourful style to brighten up your kitchen?

7. Your toaster is likely to be used often, and so you’ll want to make sure that it toasts evenly, and is capable of toasting the type of breads, croissants, bagels you want to eat. If your toaster isn’t up to the job, why not get one that is?

8. You’ll find that food preparation is more enjoyable with the right tools. Good knives, spatulas, serving spoons, salad servers and everything else you need will make creating your culinary masterpieces much easier.
